Is there anything better than waking up without alarm on a Saturday morning and having pancakes for breakfast? 😉 Last weekend it was one of those relaxed ones, and I made use of the time to re-do again a vegan banana pancake recipe I found a while ago at Hurry The Food Up. These guys have amazing vegan and vegetarian recipes, if you did not check them, do it!
That time, when I first tried their recipe, I realized that I should have first blended my oats in a S-Shape blender (chopping blade). So this time, they were 3 key components/actions that made the pancakes be so amazing and smoother: oats blended with the chopping blade before hand, use of coconut milk instead of dairy or soya milk, and the use of blade guard when blending all the components together in order to achieve a creamy mixture.
Ingredients for the Pancake:
- 1 cup oats
- 1 cup coconut milk
- 1/2 cup wholemeal flour
- 2 ripe bananas
- Straberries to taste cut in half
- 1-2 tbsp Peanut butter
- Seeds to decor
The recipe is easy to prepare and fast 😉 Put all the ingredients in a bowl together and blend with a blade guard till the mixture is smooth. Afterwards, put coconut fat in a small-sized pan and start pour the mixture. Take into account that the more you pour, the longer it takes to be properly cooked.

I honestly do not miss any dairy in my pancakes after discovering this recipe. The banana gives the perfect sweet touch and the coconut milk fits just perfectly with the rest of ingredients. All the tastes together is really sublime!! 🙂
