Sunshine Smoothie Bowl

A freezing autumn arrived to Switzerland. An autumn that welcomes you to stay at home, have a warm cup of milk and watch some movies. However, afterย such a short summer,ย it is difficult to assimilate that the warm is leaving us.

How could I bring the summer vibes to me then? Lucky enough I found mango and passion fruits in the supermarket and I got the answer to my question: still food can make us feel like in summer time, even if outside there are only 7 degrees ๐Ÿ™‚

Ingredients:

  • 1/2 Mango cubes
  • 3 tbsp almond soja yogurt
  • 1 mandarin orange/tangerine/clementine
  • 1 passion fruit
  • Muesli to taste
  • Seeds and Goji berries to taste

I have to say that the almond&soja yogurt from Alpro is very delicious. If you haven’t tried yet, I recommend you to do it ๐Ÿ˜‰ a real plant power.

Firstly, put in the blender the mango slices, half of the mandarin and three tablespoons of this almond&soja yogurt. After blending it, add to the bowl. It was the first time I was trying this mixture and I have to say it was delicious ๐Ÿ˜€

Afterwards cut the fruit lengthwise into two equal parts, and scoop out the pulp with a spoon. Go adding the pulpย slowly with a teaspoon, doing circles in the middle of the smoothie.

Next step is to add the other half of mandarin. I cut the segment in half and place them around the corner of the bowl. On the other side of the bowl, add the muesli. I like the color contrasts, so I added the Goji berries on the mandarin.

This smoothie bowl is really a happiness and vitamins bomb in the morning. The mango is a tropical food labeled as “super food” or “The King of the fruits”. It is rich in Vitamin A, which helps maintaining healthy mucos and skin; and in poly-phenolic flavonoid antioxidant. Researchers have found that this last compound can help to protect you from colon and breast cancer.

The passion fruit, on the other hand, is rich source of antioxidants, minerals, vitamins C and A; and dietary fiber.ย The tangerines are also rich in antioxidants and dietary fiber. Additionally, it contains minerals – Calcium, Phosphorus and Magnesium – that help maintaining and regulating the bone health.

I would recommend the intake of these fruits once per week at least. If you want to eat just seasonal food, looks for fruits with siminal nutrients, to ensure you stay healthy inside and outside ๐Ÿ™‚
