Matcha and Coco Pancakes

Is there something better than a lazy cooking morning? ….well probably yes, but at that day it was the best activity ever to prepare these pancakes 😀

I was recently in Konstanz and I found a matcha and coconut mix from the well known brand Veganz. I got very excited to try it! I want to use this mix for different recipes (smoothies, cakes etc.), and on the weekend I started by doing pancakes. They were d-e-l-i-c-i-o-u-s 😉

Back to the topic of lazy Sundays, as on the weekends is the only time when I have time to have a proper breakfast, I try to make the most out of it 🙂 I always have a freshly pressed orange juice glass, a big cup of green tea, fruits, nuts and anything creative that I am crabbing for (pancakes, omelette and avocado on toast). The previous day we bought fresh figs, so we use them as companion of the main dish. So good that we still could find delicious figs on the market!

Ingredients of the pancakes:

  • 1 cup all purpose flour
  • 1/2 cup soja milk
  • 1/2 cup water
  • 2 eggs / a ripe banana (vegan)
  • 2 tbsp Veganz Matcha and Coconut powder mix.
  • Chia eggs:  2 tsp chia seeds, 6 tsp water.

Start by mixing together the eggs and flour in a big bowl . Once they are well mixed, go adding slowly the soja milk and the water till the mixture has no lumps. For the vegan version, first mix the flour with water and milk, and then add the banana. Smash it properly, as it is your biggest enemy 😉

In the meantime prepare the chia eggs and let them rest for at least 5 minutes.

While the chia eggs are resting, add the two teaspoons to the mixture and whisk it all together. The mixture should get a greenish color. If you want to achieve a higher coconut flavor, you can always add coconut flakes to taste.

Last step is to pour the chia eggs, mix all again and start heating up a small size pan. I use only coconut oil for frying, since it is between all the oils, one of the healthiest when you “heat it up” (I am sure there is a professional way to say it, but I hope you understand it). For years I fried with olive oil, till studies verified that when frying, the oil was loosing the good properties and even could become “bad” for your health.

As you see in the picture above, I added dark vegan chocolate and almonds on the top. The chocolate I had to melt: add on the pan a bit of coconut oil and then the amount of chocolate you wish, and melt it.

I doubted if adding also those peach slices. At the end I ate it apart, and I had just the figs together with the pancake, the melted chocolate and almonds. I really recommend having a bite of all of them at the same time: the different taste explosion is amazing! Figs fit perfectly with the chocolate, the almonds and the matcha+coconut flavor.

To end up, I would like to say few words about the matcha and coconut mix from Veganz. I found it great for this recipe, the pancakes tasted really deli, and if you are not a matcha fan, you should not worry about it: the strong matcha flavor is balanced with the coconut.
